Campsite Cooking: Fell Foodie’s BBQ ‘Sloppy Joes’

Using basic OEX cookware, he’s teamed up with Blacks to give you some inspiration for your next hiking or camping meal.

This BBQ ‘Sloppy Joes’ recipe can be made in minutes and delivers deep, rich flavours that taste like they’ve been slow cooked for hours. The BBQ spiced mince mixture is added to fresh submarine bread roles and topped with red onion and jalapenos for a bit of a kick. It’s a satisfying and easy-to-make meal that divides easily between multiple campers. Once you’ve made it once, you’ll be craving it every time you go camping or hiking.

INGREDIENTS (serves four)

  • 1 red onion
  • 2 garlic cloves
  • 500g beef mince
  • 1 tin of chopped tomatoes
  • 1 tsp sugar
  • 1 tsp fresh oregano
  • 1 tsp chilli powder
  • Bbq sauce
  • 1 tsp English mustard
  • 4 submarine bread rolls
  • salt and black pepper
  • 1 tsp cooking oil (optional)
  • Salad garnish (optional)

INSTRUCTIONS

Prep at home

1)1) Mix some salt and pepper with 1 tsp each of sugar, oregano, paprika and chilli powder. Store in a sealed container.

At the campsite/fell.

1) Finely dice red onion and garlic cloves

2) Heat your pan on the stove and add oil. Once hot, fry your onion for a couple of minutes it begins to soften

3) Add garlic and continue to cook for another 30 seconds before adding mince and cooking until browned

4) Season to taste with the spice and herb mix and continue to fry for a minute

5) Add chopped tomatoes and simmer for a minute before adding bbq sauce and lemon juice (to taste) along with 1 tsp of English mustard

6) Simmer and stir until the sauce has thickened and the ingredients are combined before seasoning to taste.

7) Spoon the mix onto the sliced bread rolls. Top with extra red onion and jalapenos (optional)

8) Serve with a garnish of salad, red onion and jalapenos (optional) and tuck in!
